Following a long career in well-known restaurants in Santander, our famous chef, Mr. Casimiro Calleja Elguero, decided to change course and started to work in El Urogallo Restaurant, thus getting involved in this project full of energy and hope.
He has a team of six people working closely with him, so as he says “EVERYTHING WORKS OUT PERFECT, GUYS!”
Casimiro, whose father is Mexican and mother from Santander, was born in Santander in the winter of 1970. Although he began to study Economics and Business Administration, he left his studies to pursue a cooking career.
He describes himself as warm, hard-working and responsible.
He is very sure about one of his odd habits: Cleaning and keeping the kitchen tidy. “Essential in any kitchen”, he says. One of his most important virtues is the capacity to stand the stress of a kitchen like this.
His passion -without doubt – is his daughter Carol, “THE APPLE OF MY EYES”, as he says. A lovely, 7-year-old, red-haired girl.
Being from the north of Spain, his favourite dish is Bacalao a la Vizcaína (codfish salted and dried cooked with onions, tomatoes and tomato sauce), and his main speciality is rice, but also deep-fried milk, delicious for those who have a sweet tooth.
